Enlightened seafood lovers rejoice when the Spot Prawn fishery opens.
This delightfully rare coldwater prawn is available only 80 days a year, and more than 95% of them go directly to Japan, so obtaining FRESH Spot Prawns is no simple task.

Though not size graded, they will average between 8 and 10 per pound. These prawns have a sweet, crab-like flavor, are low in fat and have only 85 calories in a 3.5 ounce serving of tail meat. They are shipped heads-on, directly from live-holding tanks. Many will arrive flipping around the box.
The Spot Prawn is hermaphroditic. This means that each prawn matures as a male, but eventually transitions into a female for reproductive purposes. The regulators protect this resource by only allowing fishermen to catch them during the male phase.
Unlike most shrimp and prawns, Spot Prawns are caught with traps which means no bycatch or habitat impact. No less an authority than the Monterey Bay Aquarium rates the Spot Prawn as “good” for sustainability.
