Grilled Sea Scallops with Bacon (Serves 4)
This simple preparation is great for the grill but can also be cooked under a broiler. The smoky flavor of the bacon highlights the sweet plumpness of the scallops, as it keeps them moist.

Preheat the grill. |

Thread the bacon, then a scallop, then the bacon, then a scallop onto the skewers repeating until the scallops are used up. You will have 4-5 scallops per skewer. |

Cook on the preheated grill turning occasionally until the bacon is cooked and the scallops firm. Serve with fresh lemon wedges. |
Live Bay Scallops with Tarragon Butter (Serves 4)
When you experience FARM 2 MARKET's live in-the-shell Bay Scallops, you'll always want to cook scallops live. The tarragon butter mingling with the natural scallop juices, make this special treat truly divine. Serve as an appetizer or along side the skewered Sea Scallops.

tablespoon fresh tarragon, minced (or 1 teaspoon dried) |

Start the grill and get it hot. |

On a large sheet of heavy aluminum foil, place the scallops (in their shells), butter, tarragon, and lemon juice. Seal firmly and place on the grill. Cook until all the scallops are opened (15 minutes or so). |

Transfer the scallops to the serving dish and drizzle with the "ready-made" sauce in the foil. |
